Super Seed Crackers

Crunchy homemade crackers with 8g of fiber per serving

Ingredients

  • 1/2 cup chia seeds
  • 1/2 cup ground flax seeds
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1 cup water
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Optional: 1 tsp dried herbs (rosemary, thyme, or Italian seasoning)

Instructions

  1. Mix and wait: In a bowl, combine all seeds, water, salt, garlic powder, onion powder, and herbs. Stir well. Let sit for 15 minutes - the mixture will become gel-like.

  2. Preheat oven: Heat oven to 325°F (165°C). Line a large baking sheet with parchment paper.

  3. Spread thin: Pour mixture onto prepared baking sheet. Using a spatula or the back of a spoon, spread as thin and even as possible (about 1/8 inch thick). The thinner, the crunchier!

  4. Score: Using a pizza cutter or knife, lightly score the mixture into cracker-sized squares.

  5. Bake: Bake for 30 minutes, then carefully flip the entire sheet using another baking sheet. Peel off parchment paper.

  6. Finish baking: Bake for another 15-20 minutes until completely crispy and golden brown.

  7. Cool and break: Let cool completely, then break along scored lines.

Storage

Store in an airtight container at room temperature for up to 2 weeks. If they lose their crunch, re-crisp in a 300°F oven for 5 minutes.
